Italian Stir Fry Vegetables

Ingredients
1 tsp olive oil1 small onion, sliced2 medium carrots, cut in sticks1 tomato, chopped1 cup fresh mushrooms, sliced1/2 ts. saltdash pepper1 ts. italian seasoning
Directions
Heat Olive Oil in pan with italian seasoning. Add onion and carrots, cook until onions are clear, about 2 minutes. Add tomato and mushrooms, salt and pepper. Cook 2-3 minutes, until mushrooms are just cooked. Makes 2 1-cup servings.
