GI Chocolate Zucchini Muffins

Ingredients
1 c whole wheat flour1/2 c oat bran1/2 c cocoa powder1/4 c wheat germ2 tsp baking powder1 tsp baking soda1/4 t salt3/4 c Splenda, brown sugar blend1 c 1% milk1/2 c liquid egg1/4 c canola oil1 Tbsp vanilla2 c grated zucchini
Directions

1 Preheat oven to 400F. Line 12 muffin tins with paper liners or spray.
2. In large bowl, combine flour, oat bran, cocoa, wheat germ, baking powder, baking soda & salt.
3. In another bowl, whisk together Splenda brown sugar blend, milk, egg, oil & vanilla. Stir into flour mixture. Add zucchini and stir until ingredients are just moistened. Divide batter among muffin tins. bake for 20 minutes or until cake tester inserted in centre comes out clean.
