Roasted Tomatoes and Zucchini

Ingredients
2 Zucchini2 Tomatoes, Medium1 TBSP Extra Virgin Olive OilDash Pepper, Black1/4 TSP Minced Garlic
Directions
Slice the zucchini and tomatoes into medium thick slices. Lay them out on a cookie sheet sprayed with cooking spray. Broil them in the oven on 350deg for 20-25 minutes. As they broil in the oven mix the Olive Oil, dash of pepper, and the Garlic cloves in another bowl or casserole dish and set that in the refrigerator until veggies are done roasting. Put the veggies in the oil/garlic mixture and mix well. Set aside for 5 minutes. Serve slightly chilled or warm.
