Vegan Stuffed Peppers

Ingredients
10 serving Pepper, Poblano 1 Pepper (by AGGIEKBEAR03) 1 can (12 oz) yields Yellow Sweet Corn, Canned 2.5 cup Beans, pinto 4 oz Soyrizo, Vegan Chorizo .5 cup, chopped Onions, raw 5 tbsp Cilantro, raw 4 cup Spinach, fresh .75 cup, chopped or sliced Tomatoes, red, ripe, raw, year round average 3 tbsp Olive Oil
Directions
set oven @ 375. cup tops off peppers and remove seeds. Oil inside and outside of peppers. Mix remaining ingredients in a separate bowl, making sure to mash the beans a bit. Taste for additional salt/seasoning. Stuff filling in peppers and roast for 20-35 minutes.
