1/3 cup Splenda No Calorie Sweetener18 Low fat Vanilla Wafers8 oz no fat cream cheese1 tsp vanilla1 eggspray butter
Crush vanilla wafers in plastic bag
Line 10 muffin tins with baking cups
place 1 tbsp of wafers in each muffin tin,spray 3 times with spray butter
Let the cream cheese sit out at room temperature. After the cream cheese is soft mix it with splenda, egg, and vanilla. Fill the muffin tins 2/3 way full. Bake at 350 20-25 minutes

It was so good that I had to share with friends on FB. I would have given it 5 stars, but one of my 10 year-old son did not like it. Next time, I am thinking about trying it w/ strawberries mixed in it. Thanks for sharing it. I have been looking for healthier desserts for our family, but tasty. - 4/30/13
