Orange Bran Flax Muffins

Ingredients
1 1/2 c. Oat Bran1 c. flour1 c. flax seed (ground)1 c. wheat bran1 tsp baking powder1/2 tsp salt2 orange (quartered and seeded)1 c. brown sugar1 c. buttermilk1/2 c. canola oil4 egg whites1 tsp baking soda1 c golden raisins
Directions
Preheat oven to 375 F. Line 2-12 muffin pans with paper liners or spary with cooking oil. In a large bowl, combine flour, flax seed, wheat bran, oat bran, baking powder and salt. Set aside.

In a blender or food processor combiine oranges, brown sugar, buttermilk, oil, eggs and baking soda. Blend well.

Pour orange mixture into dry ingredients. Mix unitl well blended. Stir in raisins. Divide batter evenly among muffin cups. Bake for 18-20 minutes at 375 F. or until toothpick comes out clean.

Cool in pans for 5 minutes before remving to a cooling rack. Makes 24 muffins.
