Ingredients
¼ Cup Mashed Sweet Potatoes¼ Cup Low-Fat Cheddar¼ Cup Black Beans2 Medium Sized TortillasSalt and Chili Pepper to taste
Directions
1) Boil and mash the sweet potatoes.

2) Spread potatoes, beans, and cheese between two tortillas.

3) Heat on a griddle.
