Coconut Rice with Black Beans

Ingredients
1 serving Rice, Wild, whole grain brown rice, Lundberg Wild Blend 1 cup Beans, black 1 tbsp chopped Fresh Chives 1 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can) 2 clove Garlic
Directions
- chop fresh garlic cloves and add to simmering coconut milk in a pot. let simmer on medium for 5 minutes
- add fresh or dry chives and let simmer for another 2-3 minutes
- add pre-boiled wild rice to coconut milk mixture
- add black beans
- stire and cook for another 2-3 minutes
