5.5 cup Beans, black 2 cup Beans, red kidney 2.5 cup 365 Organic Diced Tomatoes 1 medium (2-1/2" dia) Onions, raw 2 clove Garlic 2.5 cup Yellow Sweet Corn, Canned 1.5 tsp Gourmet Garden Fresh Blends Mexican Herb & Spice Blend (by EPITWEE) .5 tbsp Chili powder .5 tsp Salt 1 dash Pepper, black 1.5 1tsp Canola Oil 1.5 cup Vegetable Broth
Heat oil in dutch oven. Saute onion until translucent. Add crushed garlic and stir briefly. Rinse beans and add to onions. Stir in spices. Add tomatoes and broth. Stir. bring to a boil. Lower temp and simmer for 20 minutes. Add corn. Simmer for additional 15 minutes. Serve with grated cheese, avocado, if desired.
