4 serving Le Gusto Klare Gemusesuppe (makes 1,5l veg stock)250 grams Onions, raw - roughly chopped 10 clove Garlic - roughly chopped 650 gram(s) Pumpkin, Raw - peeled, de-seeded, and roughly chopped50 grams Parsley - roughly chopped.5 tsp Pepper, black1 tbsp Extra Virgin Olive Oil
In a large pan or stockpot, place all the ingredients, except for the pepper and oil.
Bring to the boil, then cover and reduce the heat to a gentle simmer.
Cook for 20 minutes, or until the pumpkin is soft.
Blend until smooth.
Add the oil and the pepper, then blend again for a few seconds, to make sure the oil doesn't separate.
Serve, and enjoy!
