South Beach Vegetable Beef Soup

Ingredients
Extra Virgin Olive Oil, 1 tbsp Onions, raw, 1.5 cup, chopped beef broth, 8 cupCarrots, raw, 1.75 cup, chopped Celery, raw, .75 cup, diced Garlic, 1 clove Extra Virgin Olive Oil, 1 tbsp Stewing beef, chopped into small bitesBarley, pearled, raw, .38 cup
Directions
Heat 2 tablespoons of the olive oil the bottom of a large stock pot. Add chopped onions and stir constantly until clear; do not brown. Add beef stock, carrots, celery, garlic.

Brown beef in 1 tablespoon olive oil in a frying pan. Add to pot along with barley.

Cook until barley is tender, about 1 hour.
