Crockpot Lentil Linguica Soup

Ingredients
1.5 cup Del Monte Diced Tomatoes, No Salt Added 4 cup Lentils 3 cup Chicken stock, home-prepared 16 oz Linguica: Portuguese Sausage - 2 oz./Serving Gaspar’s) (by SPARKLING_SHERI) 5 stalk, large (11"-12" long) Celery, raw 1.5 cup, chopped Carrots, raw 4 clove Garlic 2 tbsp Curry powder 1 tbsp cumin powder (by LUCINDARW) 2 serving 2 tsp Italian Seasoning (by JULIE1933) 1 tsp, crumbled Bay Leaf 12 tbsp chopped Shallots 2 tbsp Extra Virgin Olive Oil
Directions
Chop and soften shallots, garlic, and 2-3 stalks of celery in oil over med-high heat in frying pan. Chop linguica, carrots, and remaining celery into bite sized pieces. Sort and wash lentils. Throw everything into a 6qt crockpot on low for 8-10hrs.
