Carrot/Zucchini Feta Salad

Ingredients
1 medium Carrots, raw 1 cup, sliced Zucchini 3 oz Athenos Reduced Fat Feta Cheese 1.5 tbsp Extra Virgin Olive Oil 1 tbsp Balsamic Vinegar 1 tsp Thyme, ground 0.5 cup, chopped Walnuts
Directions
with a potato peeler, peel the carrots and zucchini into strips, lightly salt with coarse salt and pepper. In a food processor, put the other ingredients, may add some water if too thick, process all ingredients except for the walnuts. toss the dressing with the carrots and zucchini, top with walnuts and flat leaf parsely if desired
