Savory Bean & Spinach Soup - Slow Cooker

6 cup Vegetable Broth .9 cup Cento Tomato Puree (by IONLYDOGPADDLE) 1.9 cup Beans, great northern .5 cup Brown Rice, medium grain 1 cup, chopped Onions, raw .5 tbsp Basil 2 clove Garlic 8 cup Spinach, fresh (can use kale, just remove stems)1 dash Salt 1 dash Pepper, black
In a 3.5-4 quart slow cooker, combine broth, tomato puree, beans, rice, onion, basil, salt, pepper and garlic. Add red pepper flakes, if desired.
Cover, cook on low for 5-7 hours or high for 2.5-3.5 hours.
Just before serving, stir in spinach. Top with parm and/or croutons if desired. [Not in nutritional info]
