Crock Pot Minnestrone Soup

1 15 oz. can Great Northern beans, drained1 15 oz can chickpeas, drained1 28 oz can whole tomatoes1 large onion, chopped3 large carrots, peeled & chpped3 garlic cloves, peeled & chopped1/4 large head of cabbage2 tomato cans filled with watersalt, 1 tsp1 bay leafBeet greens, 1 bunch, rinsed well & chopped1 cup frozen peas
Put all ingredients except beet greens & peas into crock pot and cook on low 8-10 hours.
Add beet greens & frozen peas and cook until heated through.
You can add other vegetables if you like. Save fast-cooking veggies until the end of the cooking process. You can use whatever greens you like; omit the cabbage and increase the other greens; whatever you have on hand. This will change the nutrition info though.
