STEVIE'S BLACK BEAN JAMBALAYA

Ingredients
1 Package of Polish Sausage3 Tbsp of Olive Oilblack pepper1 cup chopped onions1/2 cup chopped raw scallions (for garnish)2 Cans Goya Black Bean Soup1 Packett of Goya Sazon w/ anatto seasoningHot sauce (to Taste)1 cup of Sour Cream (for garnish)6 cups of cooked rice (to serve reciper over)
Directions
Slice Polish Saugage in 2 inch diagonal slices and place aside. In large skiilet carmelize 1 cup of onions in olive oil, do not chop onions too fine. Upon carmelizing onions, remove and place aside. Add sausage slices to skillet until a nice brown coloration appears on both side. Drain excess fat from pan. Add cooked onion back to skillet and mix with sausage slices while seasoning with black peppar (not too much. Add 2 cans of Goya bleak bean soup to mixture , 1 pack of goya sazon with annatto and a few dashes of hot sauce. Reduce heat and cook until you get a nice simmery boil going stirring frenqurntly. Once all ingrendigents have cooked into a nice gravy consistency your dish is done. Serve over white rice topped with sour cream and raw scallion slices chopped. Also serve with a nice side salad with italian vinergerette as a side dish. Should make about 4 generous servings
