Aloo Gobi

Ingredients
1 onion chopped1 in fresh garlic, grated2 tbls olive oil2 garlic cloves, minced1 tsp garam masala1/2 tsp gorund cumin1/2 tsp cayenne1/2 tsp salt1/4 tesp turmeric1/2 cup veg stock2 medium potatoes, cubed1 head cauliflower, cut into bite-size florets1/4 cup cilantro1/4 cup edamame beans
Directions
In a large saucepan on medium heat, saute onions, ginger, garic in oil until onion translucent. Add garam masala, cumin, cayenne, salt, turmeric and saute for 2 minutes stirring to avoid sticking. Add stock, potatoes. Cover with lide and cook for 8-10 minutes. Add cauliflower and cook for an addition 8-10 minutes. Stir in cilantro and edamame. remove from heat let sit for 5 minutes before serving
