Chipotle tri-tip

Ingredients
2.75 lb Tri Tip Roast 1 T Bacon grease16 ounces Harris Teeter Medium thick and chunky salsa2 T Tomato Paste1 lime 1/2 tsp Oregano, ground30.0 gram(s) la costena Chipotle - 2 peppers
Directions
Melt bacon grease in skillet. While that is happening, pat dry the tri-tip. Salt and pepper both sides. Sear each side in the skillet for 2 minutes per side. Then put the meat into a crockpot. Squeeze the lime and deseed the peppers. Combine with the rest of the ingredients in a bender and blend until smooth. Pour on meat. Put the lid on and set to low. Cook for 6 to 8 hours. Should be easy to shred with a fork.
