Green Jackfruit and Shrimp Salad

Ingredients
1 20-oz can Green Jackfruit in water, drained12 medium Shrimp, peeled and deveined1 tsp Canola oil0.5 lime yields Lime Juice 1 small clove garlic, mint1 tbsp Asian Chili Paste1 tsp Granulated Sugar 2 tbsp Vietnamese coriander or Cilantro, roughly chopped2 tbsp fried onion (optional)40-50 small baked shrimp chips for serving
Directions
Par boil canned jackfruit wedges in salted water for 3 minutes. Drain and slice thinly.
Split shrimps in half lengthwise. Season with salt and pepper. Sauté shrimps in oil on high heat for 2-3 minutes. Set aside.
Mixed lime juice, sugar, chili paste and mint garlic together. Taste and adjust ingredients.
Mix sliced green jackfruit, sautéed shrimps, chopped Vietnamese coriander, and vinegarette together. Season with salt if needed.
Sprinkle salad with fried onion (optional) and serve with baked or fried shrimp chips.
