1 tsp Curry powder 1 tbsp Olive Oil 2 cup, chopped or diced Broccoli, fresh 2 cup, chopped Cabbage, fresh 5 stalk, large (11"-12" long) Celery, raw 1.50 cup Lentils 1 tbsp Ground tumeric 2 serving Large Raw Carrot 1 serving sweet yellow onion, raw (1 medium onion) 1 serving Garlic, 1 clove 32 oz Chicken Stock Swanson 1 box (by MLBMACKIE) 32 oz Chicken Stock Swanson 1 box (by MLBMACKIE)
Saute the onion and garlic in a large soup pot until the onions are carmelized and your garlic is browned. Chop and add your veggies ( I do mine in bite size or smaller.) and add them to the pot. Add your lentils and add your broth and water if needed. (Be sure you have cleaned your lentils. Bring to boil. Add the tumeric & curry and simmer for about 30 minutes until your carrots and cabbage are nice and tender.
