Smashed Roasted Potatoes

6 Red Potatoes 4 T Extra Virgin Olive Oil 1 tsp Salt
Boil the potatoes until tender and can be easily pierced with a fork, around 30-35 minutes. Drain and let sit for a few minutes to cool. Meanwhile, preheat the oven to 45o degrees. Using a folded dishtowel, place a potato on the dishtowel, then fold over, smashing each potato with your palm. Cover a baking sheet with foil and place the potatoes on the baking sheet. Pour olive oil over the potatoes, making sure some gets underneath. Sprinkle with salt. Roast for about 30-40 minutes, or until brown and crispy. Turn over halfway through cooking. It doesn't matter if they break apart when you smash them in the dishtowel, you can still use the broken bits.
