Blueberry Almond Chia Bites

1.5 cup Quaker Oats Old-Fashioned Rolled Oats 8 tbsp Honey 12 tbsp All Natural Raw Almond Butter (MaraNatha) 8 tbsp Chia Seeds Nature's Earthly Choice 6 tbsp Bob's Red Mill - Organic Whole Ground Flax Seed Meal 10 tbsp Blueberries, dried 2 oz Almonds (1 oz-28 almonds)(5 almonds=.2 oz) 1 tsp Vanilla Extract 8 tbsp Shredded Coconut Unsweetened (Bob's Red Mill)
Rough chop Almonds.
Warm almond butter slightly in microwave.
Add coconut, chia & flax meal & stir well.
Add honey & stir in. Warm slightly again.
Add oats, blueberries & chopped almonds. Mix thoroughly & refrigerate for at least 1 hr, overnight is better.
Use a Mellon baller to scoop .6 to .8 oz balls. You will have to compress them well.
Store in refrigerator. They freeze great as well.
Serving Size: Makes 48-52 .6 oz balls 2 per serving
