Sweet potato crock pot oats

Ingredients
1.0 cup Oats, Bob's Red Mill Steel Cut Oats (1/4 cup dry)12.0 oz Almond Breeze Almond Milk, Unsweetened Original, shelf stable2 tbsp, unpacked Brown Sugar1.0 tbsp Coconut Oil1/4 cup dessicated coconut (unsweetened)1.0 tsp Cinnamon, ground1/2 large Sweet potato, cut into small dice
Directions
Place all ingredients in crock pot and stir to combine. Cook on low approx 7 hour (longer is okay too!) Delicious topped with a few chopped nuts and a little more almond milk or yoghurt.
