Quick Tofu Cauliflower Korma

Ingredients
2 tbsp Coconut Oil 1 tbsp Curry powder 2 tsp Garam Masala (by CHIIEDDY) 2 tsp Salt 4 medium Carrots, raw .5 medium (2-1/2" dia) Onions, raw 3 clove Garlic 8 tbsp Shredded Coconut Unsweetened (Bob's Red Mill) 1 can Canned Tomatoes 15 oz Trader Joe's High Protein Organic Super Firm Tofu, 5 Servings Per Package (by JULIEMAE74) 1 head, medium (5-6" dia) Cauliflower, raw
Directions
Melt oil in a big pot. Add chopped onions and garlic. Add spices. Add carrots. Add coconut and canned tomatoes, incl liquid. (You can sub a can of coconut milk if you want something more soupy/stew-ish.) Cook over medium heat until veggies soften. Use an immersion blender on the whole thing. Then add in tofu and chopped cauliflower. Adjust salt to taste Top with cilantro (optional). Serve over brown rice (optional).
