French Strawberry Pie

1 Redi frozen pie crust (9 in) baked2 pints of fresh strawberries1 tbsp lemon juice3 oz pkg of fat free cream cheese1 cup of sugar3 Tbsp cornstarch1 pint of heavy whipping cream1 Tbsp confectioner's sugar
Bake the pie shell according to instructions on box. Let the pie crust cool slightly. Spread the cream cheese on the bottom of the crust. Hull the strawberries and stand the largest ones with tips facing up into the cream cheese pie crust. Place the rest of the berries into a blender with lemon juice to make one and a half cups liquid. Puree the berries.
Over medium high heat cook the berry mixture, sugar and cornstarch, stirring with a wire whisk, bring to a boil until the mixture turns clear. Cool, pour over strawberries and refrigerate about three hours.
Whip the cream and the confectioners sugar until stiff and dollop around edge of pie.
Makes one 9-inch pie.
