Ingredients
1 med cauliflower4 small potatoes1/2" piece fresh ginger, grated3 tbsp veg oil1 tsp cumin seedsalt and pepper to taste1 tsp ground coriander seed1 tsp gram masala1 tsp turmeric1 tbsp dried fenugreek leaves1 clove garlic1 tbsp lemon juice
Directions
cut cauliflower into 1" florets. Peel and cut potato into 1" cubes. Heat oil over med-high and add cumin seed. After a second, add grated ginger. saute for 30 secs then add cauliflower, potato and all spices. Mix well and cover. Cook on med-low heat until very tender, about 20 mins. Stir occasionally to prevent food from sticking. When veges are done, uncover pan and mix in lemon juice. Stir-fry for 5 mins to evaporate all liquid.
