White Bean, Cheese & Spinach Quesadillas

Ingredients
8 serving Whole Wheat Tortilla, medium (45g) 8 large Egg, fresh, whole, raw 1.5 cup, shredded Cheddar Cheese 5 cup Spinach, fresh 1.5 cup Beans, white 1 tbsp Extra Virgin Olive Oil
Directions
Combine eggs, shredded cheese, and beans in a medium bowl. Add garlic powder, salt & pepper to taste.
Scramble in fry pan over medium heat till eggs cooked through.
Stir in coarsely chopped spinach.
Let cool to room temp. Meanwhile, toast tortilla's over medium heat - with olive oil.
Assemble quessadilla's - roll up individually and wrap tightly in plastic wrap. Freeze on a cookie sheet 1 - 2 hours.
Place into a Ziploc freezer bag.
To cook - thaw in fridge overnight - microwave on high for 1 - 1/2 minutes. Or you can microwave straight from freezer in a pinch.
