Quick Curried Chicken

4 Boneless Skinless Chicken Breasts2 tbsp Butter, unsalted 1 cup, chopped Onions, raw .5 cup Chickpeas (garbanzo beans) 4 tbsp Raspberry Jam2 tbsp Chobani 0% Plain Greek Yogurt4 tsp Curry powder
In a large skillet over medium heat, melt the butter and add the chopped onion and curry powder.
Saute until the onion is tender.
Add the diced chicken and cook until cooked through, stirring frequently.
Add the chickpeas, jam, and Greek yogurt.
reduce heat and simmer for 5 minutes.
Serve over rice. Top with whatever you have handy: coconut, raisins, sliced almonds, chopped apple or celery, peas, fresh diced broccoli florets, etc.
