1 cup water2 1/2 cup Almond Flour1/2 cup plus 1 T Coconut Flour 1 tsp Xantham Gum 1/2 tsp Kosher Salt 1 T Xyla/Xylitol Natural Sweetener 5 Large Eggs, Large, Free range or Organic 1 T Grapeseed Oil 2 T Organic Extra Virgin Coconut Oil 1 tsp Bragg Apple Cider Vinegar
In large bowl whisk together almond flour, coconut flour, baking soda, salt, xylitol and xantham gum. Set aside. In food processor, blend eggs until frothy. Add water, oil, and vinegar, blend well. Add dry ingredients all at once and process until well blended. Grease 8" loaf pan, pour batter into pan and bake 50-60 minutes at 350 degrees Farenheit. Cool in pan 10 minutes then transfer to wire rack to cool completely before slicing. Store in refrigerator up to one week or freeze (wrap individual slices).
