Low-fat curried lentils

1 tbsp olive oil or Butter, salted (nutrition info has butter)1 medium (2-1/2" dia) Onions, raw , diced2 stalk, large (11"-12" long) Celery, raw, diced2 tbsp Curry powder 1 tbsp Fish Sauce or soy sauce, or 1/2 tsp. salt, or to taste2 cup cooked Lentils (I use cooked or frozen/cooked, but you can use dried or canned -- see notes)3 clove Garlic , minced1.5 to 2 cups canned Diced Tomatoes, not drained
Cook the onion, celery, garlic, and curry powder on medium heat until the onions are softened but not brown. If using cooked lentils (from a can, frozen/cooked, or ones you cooked), add remaining ingredients and heat through before serving.
If using dry lentils, add 1 cup cooked lentils and 2.5 cups water, then bring to a boil. Lower heat. Simmer 20-30 minutes, until lentils are the consistency you like.
Serving Size: Makes 4 servings (or 2 really big ones)
