Low carb Chicken Sausage Gumbo

Ingredients
8 Chicken Thighs 10 oz Ground Pork Sausage, Lean cooked, drained 3 serving Baby Bell Peppers (3 peppers = serving) 1 cup, chopped Onions, raw 15 Brussels sprouts, fresh 1 cup crushed pinapple in juice1 serving Pepperchinis (4 peppers) 2 cup Baby Spinach
Directions
cook thighs in pepperchinis juice with seasoning of choice I used pepper, salt, 2 garlic, in crock pot for 3 hours, then remove skin and bones. put back in juice in crock pot, cook sausage and add to crock pot, add all other ingredients except spinach and cook another 3 hours 15 min. before done add spinach then enjoy. You may put over rice or noodles, gnocchi or have w/o for less carbs
