1.0 tbsp Extra Virgin Olive Oil1.0 cup, chopped Onions, raw74.0 gram(s) bell pepper, red, sweet, raw2.0 stalk, large (11"-12" long) Celery, raw1.0 serving Herb Ox Sodium Free Chicken Bouillon Instant Broth & Seasoning0.66 cup Minute Rice Multi Grain Medley1.0 tsp Thyme, ground2.0 tsp Lemon Juice 'Real Lemon' 100% juice0.25 tsp Pepper, red or cayenne1.0 serving Salt, substitute: Morton, Salt Substitute, 1/4 tsp (1.2g)/serving7.5 cup Bush's Blackeye Peas0.5 cup Del Monte Diced Tomatoes, No Salt Added
Directions
Heat oil in a large nonstick skillet over medium heat. Add onion,bell pepper and celery. Cook until the veggies soften ,3 to 4 minutes. Add garlic and cook one minute. Add broth ,multi grain medley,thyme,lemon juice,crushed red pepper and salt; bring to a boil. Reduce from heat cover and simmer until multi grain is done. Rinse black eyed peas. Remove from heat and stir in black eyed peas. Cover and let stand for five minutes. Serve hot.
