Ingredients
1 med. Eggplant 1 med. Zucchini1 cup of Italian Breads1/4 cup of Egg Beaters
Directions
Preheat 350
Chop up veggies and put on a prepared cooking sheet ( Sprayed with Cooking Spray) & Spray Veggies. Cook 350 for 30 minutes.
Take out & mash in bowl add Bread crumbs & Egg Beaters & mix. Use cookie scooper to make balls. Makes 16.
Place on prepared sheet & Bake for 30-35 minutes.
