Seitan BBQ Riblets

1 cup vital wheat gluten2 Tbsp nutritional yeast2 tsp onion powder1 tsp garlic powder1 1/2 Tbsp cashew butter3/4 cup hot water1 Tbsp low sodium tamari1 tsp liquid smoke (optional)4 Tbsp BBQ sauce of your choice (I used Annie's Organic)
Preheat oven to 350
In a bowl mix the first four ingredients.
Dissolve the cashew butter in the hot water. Add the tamari and liquid smoke if using.
Pour the wet into the dry, mix well with your hands. If it's very dry as in: not all combining, add a little more water. Knead in the bowl for a minute or two.
In an oiled 9x9 baking dish, spread the seitan out until it fills the pan.
With a sharp knife, score seitan with 8 parallel cuts. Turn dish 1/4 turn and score right across the middle, making a total of 16 "ribs".
Bake 20 minutes.
Remove from oven and brush BBQ sauce generously over the top and sides if seitan has pulled away at all from the sides.
Bake 5 more minutes.
Remove from oven and with a spatula, flip ribs. Brush with BBQ sauce and bake 5 more minutes.
Remove from the oven and flip over again so scored side is up.
Pull apart to eat.
