Cauliflower Vegetable Fried Rice

4.0 cup Cauliflower, raw2.0 cup stir fry veg,frozen,Great Value brand2.0 medium (4-1/8" long) Scallions, raw2.0 clove Garlic2.0 tbsp Sesame Oil2.0 large Egg, fresh, whole, raw2.0 tbsp Soy Sauce
Preheat oven to 375 degrees and line baking sheet with aluminum foil. Pulse cauliflower in food processor or buy crumbles. Let stir fry veggies thaw. Combine cauliflower, scallions, sesame oil and pressed garlic, and spread on baking sheet. Roast for 8 minutes, stir, and roast for another 8 minutes. Add stir fry veggies and soy sauce, and roast another 5-7 minutes. Meanwhile, scramble eggs and add to "rice" when everything is done cooking. May add cooked shrimp or chicken if desired.
