Easy Vegetable Stir-Fry

Ingredients
Olive oil-flavored cooking spray1 medium onion, cut into thin wedges1-1/2 cups julienne-cut carrots1-1/2 fresh Sugar Snap Peas, trimmed1 cup chopped sweet red pepper1/2 cup low-sodium chicken broth, undiluted2 tabblespoons low-sodium soy sauce2 teaspoons cornstarch1 teaspoon sugar1/4 teaspoon ground ginger1/8 teaspoon ground red pepper
Directions
Coat a wok or large nonstick skillet with cooking spray. Heat at medium-high (375 degrees) until hot. Add onion,;stir-fry 3 minutes. Add carrot; stir-fry 2 minutes. Add peas and sweet red pepper; stir-fry 4 to 5 minutes or until vegetables are crisp-tender.
Combine chicken broth and remaining ingredients, stirring with wire whisk until smooth; add to vegetable mixture. Cook stirring constantly, until mixture is thickened. Serve immediately.
This has a bit of a bite, so if you don't like that, leave out the ground red pepper.
