Asparagus Clafoutis

Ingredients
2 cup Asparagus, fresh and chopped0.5 cup, chopped Onions, raw 2 tbsp Extra Virgin Olive Oil 1 tsp Thyme, fresh 1 tsp Lemon Peelsalt & pepper to taste 0.5 cup Parmesan Cheese, grated 3 large Egg, fresh, whole, raw 0.75 cup Milk, 1% 0.5 cup Sour Cream 0.062 cup Flour, white 0.5 tsp Vanilla Extract pinch of cayenne
Directions
Roast asparagus and onion with olive oil at 425 degrees on bottom oven rack for 30-35 min. toss with lemon zest and thyme, salt & pepper. Spray Pam in pie dish, sprinkle half the parmesan, put roasted veg on top, whiz eggs, milk, sour cream, flour, extract & cayenne in blender, pour on top of veg, sprinkle rest of parmesan and bake for 20-25 min.
