CC's Black Beans & Spanish Rice

Ingredients
1 - 6.8 oz box of Rice-a-Roni type Spanish Rice & Vermicelli mix1 - 14.5 oz Can Diced Tomatoes (or diced tomatoes w/chiles)1 small can green chiles (optional)2 tbsp/pats butter, unsalted 15 oz can black beans, drained1/2 medium green bell pepper 1 cup chopped onions1 1tsp Olive Oil
Directions
Use a large skillet:
1. Follow directions for the box of rice & vermicelli mix with spanish seasonings.
2. Saute half a medium green bell pepper, chopped, and about 1 cup of chopped onion in 1 tsp olive oil.
2. When the box mix calls for adding water and tomatoes, add the drained can of black beans and the pepper/onion mix also.
3. Cook the mixture for about 12-15 minutes, or until the rice is done.
You can also add a small can of green chiles, or tomatoes with green chiles instead of just diced tomatoes.
