Vegan Lentil Soup with Kale

Ingredients
1 lb. lentils1 large onion, peeled & chopped3 cloves of garlic, peeled & chopped1 28-oz can whole tomatoes2 stalks celery, choipped2 or 3 large carrots, peeled & chopped2 Bay leavesOreganoSalt & Pepper1 head of kale, washed and chopped
Directions
Add all ingredients up to "bay leaves" into a crock pot, along with one tomato can filled with water. Cook on "low" all day or until lentils are cooked through. .

Shortly before serving add kale & seasonings to taste. Turn to high and cook just until greens are wilted. You can use other greens in this, including extra romaine lettuce if you need to get rid of some.

    I'd like to try this recipe, but am concerned that the nutritional data is incorrect. 45 grams of lentils (the amount per serving) actually have about 159 calories, not 53 as indicated. This means one small serving of soup would have about 197 calories. - 1/18/15
