Ingredients
1 large onion, chopped3 - 4 cloves garlic, minced1 green bell pepper, chopped1 1/2 cups vegetable broth1 14-ounce can diced tomatoes (I used fire-roasted)15 ounces fatfree refried beans15 ounces black beans, cooked1 cup frozen corn kernels2 T taco seasoning
Directions
Spray a large, non-stick pot with cooking spray, and sauté the onion until it begins to brown. Add the garlic and bell pepper and cook for one more minute. Add all the remaining ingredients and cook until the flavors blend, 20-30 minutes. makes 7 - 1 cup servings

    This soup was pretty good. I didn't have taco seasoning so I added extra garlic, cayenne pepper, cumin & chili powder. I also used a stick blender at the end and added a dollop of light sour cream when serving. It has a lot of flavor which is tough to find in a low fat meal. Definitely a keeper! - 1/21/09

    I trhougfht this was delicious. Very simple to make. I added shredded carrots and a little bit of cheese at the end. - 9/25/08
