P3 Blueberry Muffins

3 large Eggs, (room temperature, very important!)1/3 c. Coconut Flour 1/4 cup Butter, melted1/2 tsp Vanilla extract, imitation, alcohol 1/2 tsp Salt 1/4 c. Stevia 1/2 tsp Baking Powder 1 tsp Cinnamon, ground 1/2 cup Blueberries, fresh 5 Tbsp Water
Heat oven to 375 degrees. Prepare muffin pan with liners or grease with butter.
1. Whisk eggs until yolks and whites are well mixed. Stream in butter while still mixing. Add Salt and Vanilla until combined.
2. in separate bowl, Mix remaining dry ingredients together. (coconut flour, baking powder, stevia, cinnamon)
3. Mix wet and dry ingredients together. Now whisk 1 Tablespoon of water in at a time. Add just enough of the water until mixture is thick enough to hold up the blueberries but not too thick.
4. Gently fold in the blueberries and then divide the mixture among 6 muffin cups.
5. Bake for about 16-18 minutes or until top starts to turn golden.
