Vegan Grilled asparagus with Curried Yogurt Sauce

Ingredients
3/4 cup vegan yogurt1 teaspoon curry powder3 tablespoons orange juice1 tablespoons lime juice1 tablespoon maple syrupdash of salt to tastedash of fresh ground black pepper to taste20 spears of asparagus1 tablespoon of extra virgin olive oil
Directions
Makes 6 ample servings

Place the first 6 ingredients in a small bowl and whisk to combine.

Cover and store in the fridge until needed.

Preheat your barbecue to medium high.

Brush the asparagus spears with the olive oil and grill them for 1 - 2 minutes per side until nicely grilled but not overly dark.

Arrange the asparagus on a serving platter. Serve the curried yogurt sauce alongside.

Note. To blanch the asparagus spears plunge them into boiling water and cook for 2 minutes. Drain well and cook in ice cold water. Drain well and pat dry.
