Maple Syrup Roasted Carrots

Ingredients
2 lbs carrots3 tablespoons of maple syrup1/4 cup vegetable broth1 tablespoon extra virgin olive oil1 ounce lemon juice (fresh squeezed)Pinches of ground cinnamon, nutmeg and clovesDash of salt to tasteDash of fresh ground black pepper to taste1 tablespoon fresh chives (chopped)
Directions
Makes 4 large servings

Preheat the oven to 275 degrees F.

Peel the carrots and lice into 1/2 thick circles.

Place the carrots in a 9" x 13" baking dish.

Toss in the remaining ingredients (except the chives).

Roast the carrots uncovered , stirring occasionally, for about 35 - 40 minutes until they are tender.

Transfer the carrots to a nice serving dish and sprinkle with fresh chopped chives.

Serve and enjoy the smiles on your guests faces.
