Honkey Eggs

Ingredients
1.5 lb lean bacon cut up1 medium onion5 large potatoes5 tbs olive oil1 Dozen Eggs1 cup Shredded Chedder Cheese
Directions
In an electric skillet brown the bacon and onion. When the bacon is done add the potatoes and olive oil. Cover and cook at 250 F for about half hour. Stir periodically. Then add the eggs and stir them in. Stir until the the eggs are done. Then add the shredded cheese on top. Turn off the heat and cover. Serve when the cheese is melted.
