Shane's Quinoa Chicken

Ingredients
1 cup, chopped Onions, raw 1 cup, diced Celery, cooked 74 gram(s) bell pepper, red, sweet, raw 1 pepper Jalapeno Peppers 3 serving Beans, Kidney beans dark red 3 serv can 0.50 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 2 tsp Salt (table) (by CYNDYY1) 1 tsp Pepper, black 1 tsp Seasoning, Tony Chachere's, The Original Creole Seasoning (1/4 tsp, 1g) (by SPARKYWATSON) 1 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted 1 tsp Lime Juice - ReaLime 100% Lime Juice 1 tbsp Extra Light Olive Oil
Directions
Start by cooking Quinoa in a small pot. Roast Chicken breast in over at 425 for 20 minutes or until juices run clear. On stove cook Onion, Celery, Bell Pepper and Jalapeno until they start to brown 4-5 minutes over medium high heat. Add in cooked Quinoa and Kidney Beans (or Black Beans). Season with Tony's, Salt and Pepper. Add in sliced chicken breast. Optional. Add Lime juice and olive oil at the end.
