Danny Seo's Chocolate and Ginger Macaroon Cookies

1/2 c semi sweet chocolate chips2 large egg whitespinch sea salt1/2 c maple crystals1/2 tsp vanilla 1 tbsp ground ginger 1 c unsweetened shredded coconut3 tbsp cocoa powder
Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
Use a double broiler to melt chocolate and set aside to cool.
In medium bowl add salt to egg whites and beat with mixer until peaks form adding maple crystals slowly.
Use a spatula to fold in vanilla, ginger and coconut. Add cocoa powder and melted chocolate and stir.
Use ice cream scooper to add cookies to cookie sheet and bake 15-20 minutes. Cool and serve.
Serving Size: makes about 20 cookies
