Ingredients
1.0 tbsp Coconut Oil1.5 cup, chopped Cabbage, fresh1.0 tsp Garlic1.5 cup Spinach, fresh2.0 serving Great Value Manzanilla Green Olives (Pimiento Stuffed ) 5 Olives1.0 serving Hormel Pepperoni (15 Pepperoni)1.0 serving Cheese, Great Value Finely Shredded Italian Style (1/3 Cup)
Directions
On that note, I just invented a wonderful lunch meal I will call "Warm Mediterranean Salad" It went down like this: 1 Tbs coconut oil melt in large skillet at med heat Add: 1 tsp minced garlic 1-1/2 c fresh baby spinach 1-1/2 c fresh shredded cabbage 12 slices of pepperoni 10-12 green or black olives, halved salt and pepper to taste Stir, keeping temp med or below, until cabbage and spinach are soft Serve, top with shredded mozzarella cheese Girls, it was SO yummy! Serving Size: 1
