Cheesy Chicken & Oinions

Ingredients
2 (4oz) boneless, skinless chicken breast, cubed1 tbsp butter, unsalted 2 tsp Italian seasoning1/2 tsp salt, or to taste 1 tsp black pepper, or to taste 5 slice (1 oz) provolone cheese 2 tbsp coconut oil 1 med onion, sliced
Directions
Cook sliced onions in coconut oil on medium heat for 3-4 mins until just tende. Add butter, chicken and seasonings. Cook until chicken is done and no longer pink. Continue to cook until chicken starts to brown nicely and onions start carmelizin. Lower heat to low and lay whole slices of provolone cheese over all ingredients in pan and place cover on pan until cheese is melted. Serve immediately.

Can omit onions is needing lower carb count or can add bell peppers if carb count needs to be higher. Can also serve over hoagie bun for a Philly Cheese Chicken Sandwich if carb count is not an issue.
