Vegan Ranch Dressing

Ingredients
1 pkg. firm tofu (12 ounces of 340 grams) crumbled1/4 cup extra virgin olive oil2 tbsp of balsamic vinegar2 tbsp fresh squeezed lemon juice or 1 ounce of bottled lemon juice2 tbsp water1 teaspoon fresh chopped tarragon1/2 tsp fresh chopped dill1 crushed garlic clove1/2 tsp dry mustard powder
Directions
Makes about 50 average size servings that when kept covered in the fridge can last for about 5 days - recipe can easily be reduced to suit a lesser number of people.

Combine all the ingredients in a blender and process until smooth and creamy. Enjoy with your favourite salads.
