Spicy Chicken and Bean Soup

Ingredients
3.0 cup kernels Yellow Sweet Corn, Frozen1.5 cup Beans, white2.5 serving Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano24.0 oz Tyson boneless, skinless chicken breast1.0 cup Minute Ready to Serve Brown Rice
Directions
Boil 3 bone in skin on chicken breasts with carrots, celery, onion and a bay leaf until meat easily pulls from the bone. Drain and reserve broth in a covered container. Refrigerate until fat hardens. Cool the meat while still on the bone. Scrape fat from the broth and begin warming the broth. Chop chicken after discarding the bones and skin. Add chopped chicken, drained diced tomatoes, rinsed white beans 1 bag of frozen corn and 1 cup of brown rice. Bring to a boil. Turn to a simmer and add 1-2 TBSP red pepper flakes, 2 TBSP chili powder, garlic and cumin seeds. Let simmer for an hour or until rice is tender. Serving Size: 12
